Microsoft Azure states 40 to 60 questions for AZ-700, with a time limit of 100 minutes. That is about 2.5 minutes a question, including the time it takes to read the stem and the options.
Microsoft Azure publishes a range rather than a fixed count, so the pace above assumes the low end of it. At the top of the range you have less time a question.
